Korean American chef Judy Joo will open Seoul Bird, her new restaurant specialising in crispy, double fried, Korean-style chicken this November. Seoul Bird is opening in Westfield Shepherd’s Bush and the menu will emphasise the bold flavours and considered cooking Joo is known for.
Korean American chef Judy Joo opening Seoul Bird, her new restaurant in West LondonHaving teamed up with long-time friend and collaborator, chef Andrew Hales to create the menu inspired by Judy’s Korean-American heritage, diners will find their take on ‘Korean Seoul Food’.
Made to Judy Joo’s secret recipe, the Korean Fried Chicks are brined for 24 hours before being double fried for extra crunch, and served with an Asian slaw of red cabbage, daikon, onion and carrot, tossed in a citrus soy dressing.
Using only high welfare chicken across the menu, Judy has devised her Signature Seoul Burger, a freshly toasted bun with golden crispy Korean fried chicken, drizzled with signature soy and gochujang glaze, and topped with kewpie mayo, red onion, and iceberg lettuce.
Harking back to the flavours of traditional Korea, Seoul Bird also offers bibimbap bowls, mounds of steamed rice (or cauliflower rice) piled with crunchy fresh vegetables, pickled daikon, edamame beans, crispy onions, and finished with a soft poached egg.
To drink, those looking for the full Korean experience can order bottles of Jinro Chamisul Fresh Soju, Korea’s favourite spirit, as well as Soju Iced Tea and Camden Pale Ale. Korean Iced Teas will be served in three varieties – yuzu, sweet plum, and green—and to reduce plastic usage, all drinks will be served in cans and glass bottles.
The interiors have been designed by Run For The Hills, the West London-based design studio, taking their cues from Seoul’s architectural motifs. The counter is fronted by traditional Korean lattice work in blackened steel and burnished brass, whilst the wall behind is crafted from concrete Korean-style roof tiles, illuminated by custom designed tubular lights.
Judy says, “The Korean way of cooking is so generous and hospitable – Seoul Bird is my interpretation of true Korean comfort food, from shatteringly crunchy fried chicken to warming, spicy gochujang sauces. I can’t wait to bring my favourite flavours and a big taste of Korea to Westfield!”
