By James Russell: Kitchen Porter predicted Michelin star awarded yesterday, over two years ago

Tim Allen’s Flitch of Bacon Inn becomes Essex’s only restaurant to hold a coveted Michelin star. Based in Little Dunmow, the Flitch of Bacon Inn has last night been awarded its first Michelin star after only eight months with Tim Allen at the helm.

In February 2018, Tim became chef partner, bringing his own special combination of exquisite food and excellent service at this charming restaurant with rooms.

Tim and his team have transformed the historical Inn into a destination restaurant as well as an inviting hub for locals to experience Michelin-starred dining. Since February they have seen the restaurant experience evolve, with the introduction of guest chef nights, a wine club for dinners and of course establishing itself as the go to place to for traditional Sunday lunches, all whilst using fresh, local produce.

Commenting on yesterday’s award Allen told us:

“I am absolutely delighted the Inn has achieved its first Michelin star. It has been a challenging yet thoroughly enjoyable journey for myself and the team. I have always seen food as a way to connect people and share special experiences and we will continue to host our guests and let them leave with happy memories each and every time.”

The title of this article – Kitchen Porter predicted Michelin star awarded yesterday, over two years ago – now needs some explanation…

A member of the H&C News team did a stint of KP’ing at ‘The Flitch of Bacon’ as it was then named a few years ago.

Two remarkable things have followed on from that day.

  1. The Michelin star awarded yesterday was indeed predicted, here’s the quote:

“KP’ing would not be everybody’s cup of tea for sure and if you own a restaurant please don’t call me any Sunday morning unless I owe you a very massive favour. But I must say that I enjoyed my temporary stint as a KP and as for The Flitch of Bacon…watch this space, the team that I had the privilege to work with will deliver industry accolades.

“From the more than contented look on the diners leaving that afternoon and a word with one or two, a Michelin star could be on the cards, just remember the KP that told you so first.”
