28-year-old Dale Sutton begins his role as head chef at Frenchie Covent Garden this month. The chef arrives from Paris, where he spent 3 years as executive Group Sous Chef in Paris looking after all three Frenchie sites on Rue du Nil (Frenchie restaurant, Frenchie Wine Bar and Frenchie To Go). Prior to joining the Frenchie empire, Australian-born Dale spent a year at David Chang’s Momofuku Seiobo as Junior Sous Chef. He previously worked in the kitchens of Aria Restaurant (Sydney) and La Petite Maison (London).
Dale has helped Chef Patron Greg Marchand and the Paris team to achieve international critical acclaim, most recently hosting industry bigwigs for the first meeting of the World Restaurant Awards. With his extensive experience working alongside Greg, Dale is well-versed on the unique ‘Frenchie way’ and is in the perfect position to guide the London team as the Covent Garden site continues to thrive.
Commenting on his new role, Dale said: “Working with Greg and the rest of the Frenchie family in Paris has been an incredible experience and I’m excited to continue this journey here in London. The Frenchie brand is as international as they come, with influences in the offering from all over the world. At the core of the offering, however, there is of course that little spark of Parisian know-how. I’m excited to use my experience to bring a bit more of that to customers in London at Frenchie Covent Garden.”
