By James Russell: Chef Sean Marsh takes the helm at The Hour Glass in Brompton

Brompton’s historical neighbourhood pub and dining room The Hour Glass, is pleased to announce the appointment of new Head Chef Sean Marsh and General Manager Brett Hardy. Sean brings with him a wealth of knowledge from some of the world’s most prestigious Michelin starred kitchens including Mugaritz in San Sebastian and London’s infamous St. John Bar & Restaurant – to name a few.

Together with General Manager Brett Hardy – whose experience in the hospitality industry includes working with Mark Hix, Antony Worrall Thompson, and Alex Aitken – Sean has devised a daily changing menu centered around traditional British fare dictated by the seasons.

Working where possible with traditional British suppliers such as Huntsham Court Farm in Herefordshire and Taste Tradition for their meat, sourcing seafood from small day boats and sustainable producers along the south coast, and ensuring that fruit & vegetables come from celebrated suppliers such as Chegworth Valley and Forge Farms – each product is chosen carefully for its quality and taste.

“My approach to the menu is one that is ingredient driven and pared back. The quality of produce begins with a producer. From the moment a fish is landed, a seed is planted or an animal is born, the time and effort that these producers take to care for these ingredients really shows in the end. For this reason, I don’t devise dishes and then hunt for what I need – I ask those who know their products best what they think is of best quality at any one time, and devise dishes from there. My job is to preserve and showcase the flavours that nature and hard work have created“. Head Chef Sean Marsh

The quintessentially British art deco building which houses The Hour Glass has been sympathetically refurbished to mimic the era, with bespoke gold and glass arched shelving adorned with vibrant foliage, opulent curved glass lighting and accented mirrored walls, all providing a warm and beautiful setting to enjoy seasonal British food at its very best.
