Traditional Indian Food meets Modern Day Technology

By James Russell: Traditional Indian Food meets Modern Day Technology

October 24, 2017

Join the team at the Open Kitchen Live day on 21st November to see how easily operators can benefit from modern cooking technology in so many ways and that simultaneously addresses the growing problem of skills shortages.

Three very different cooking platforms will be in use on the day, any of which can be added to existing kitchen line-ups as you see how to ‘mix-and-match’ to obtain the very best to streamline your own operations.

The Nieco Conveyorised Gas Char-Broiler de-mystifies and de-skills the cooking process for many static grill items using pre-set temperatures and times enabling lower skilled staff the ability to produce freshly grilled chicken tikka & lamb kebabs with char-grilled vegetables, lobster tails, shell-off prawns, scallops, masala rib eye steaks, and Indian spiced burgers and much more leaving your skilled chefs’ free for the task of presentation – all served with appropriate sauces & accompaniments.

The Rational Oven shows you an alternative for also de-skilling using multi-level pre-set programmes and demonstrates an alternative method of cooking many of the same items as the Nieco but also add chapati’s, chicken tikka, lamb chops, paneer, shish kebabs – and for successfully achieving that all-important challenge – re-heating including samosas, breads, pre-cooked curries, rice, and sauces.

The FRIMA Vario Cooking Centre with Pressure facility allows bulk cooking of wet curries in around 1hr 15mins, bulk vegetable curry & rice for biriani’s, sag aloo; its shallow fry option for pakoras, prathas, searing meats, a deep fry option for onion bhagees, sauté facility for balti proteins and vegetables and more…

Customers are invited to challenge us – bring some own product for us to cook or re-heat via the platform of their choice on the day.

Head Chef on the day is MasterChef finalist and runner up, Daksha Mistry. Daksha will be cooking the following dishes…

  • Paneer Tikka
  • Masala Marinated prawns served with chilli sauce
  • Jeera chicken with Riata
  • Chicken tikka
  • Spiced Lamb burgers with yogurt mint sauce
  • Lamb Kebabs skewers
  • Mince lamb kofta with coriander and mint chutney
  • Pitta bread
  • Naan Bread

Daksha is very passionate culinary entrepreneur, she took her first steps in making her passion her career when she took part in BBC’s MasterChef, where she emerged as a finalist and came second.

We were told by Chef:

“Anyone who thinks they know what to expect is in for a surprise, Asian food is developing fast and my menu will reflect that.”

We look forward to welcoming you on the day
