The Atlantic Hotel in Jersey has appointed Will Holland as Executive Chef at the award-winning Ocean Restaurant from October 2017. Will joins The Atlantic from his position as Head Chef at Coast Restaurant in Pembrokeshire, Wales.

Will has been working in Michelin-starred restaurants since the age of 18 and was awarded a star before he was 30. He brings experience in some of the finest establishments across the UK, including La Bécasse Restaurant, L’Ortolan Restaurant, Gravetye Manor Hotel and Homewood Park Hotel. Will is recognised by The Good Food Guide as one of its predicted 10 most influential chefs of the next decade and was named UK Restaurant Chef of the Year 2016 by The Craft Guild of Chefs.

Launched by Will and his team, Coast Restaurant was awarded 2 AA Rosettes just five days after opening in 2014 and won AA Restaurant of the Year for Wales in 2015. With a relaxed vision of good food, Will’s menus focus on celebrating the finest British ingredients. Journeying from coast to coast to join The Atlantic, Will brings with him his desire to work with local producers to source high-quality ingredients, an approach Ocean Restaurant has long championed in its mission to help put Jersey on the map as a gourmet destination.

Concluding 13 successful years at The Atlantic Hotel, incumbent Executive Head Chef Mark Jordan will remain at the helm of Ocean Restaurant until the close of the summer season at the end of October. Will Holland will complete the summer at Coast before joining The Atlantic in October.
