This summer, Vivek Singh’s modern-Indian restaurant Cinnamon Soho, will join forces with Ryan Chetiyawardana, aka Mr Lyan, to launch a new ‘green’ Summer Festival Terrace. Following a successful collaboration at Cinnamon Bazaar earlier this year, Ryan and Vivek are teaming up again to combine their principles of reducing and reusing food and drink waste to help the environment and encourage Londoners to waste less. Popping up this June, the sustainable alfresco terrace will feature a range of Mr Lyan ‘Upcycled & Recycled’ cocktails alongside a selection of Vivek’s signature street food served in recycled dishes, ensuring nothing goes to waste. The space will be decked out with salvaged furniture and materials, making the Summer Festival Terrace the eco-friendliest spot to kick back and relax this summer.
Upcycled & recycled cocktails
A greener cocktail era has hit London led by Mr Lyan, who is bringing his sustainable cocktails to the Cinnamon Soho Summer Festival Terrace. Featuring upcycled and recycled ingredients like watermelon rinds, pistachio shells and leftover chai to create syrups, cordials and liqueurs, Mr Lyan’s range of refreshing sustainable drinks will be served in repurposed milk bottles. Highlights include a Watermelon Rind Tonic, made with tequila and watermelon rind tonic syrup, as well as a herbaceous Mint Stem & Curry Leaf Collins, combining Colombo gin, fresh lemon juice, mint stem cordial and soda water for a flavour-packed bpunch. Cool off with a Cashew Butter Milkshake blended with almond milk, cashews and crushed pistachios – dairy free, alcohol free and totally indulgent.
Street food
Vivek Singh and his talented team have created a special Summer Festival Terrace street food menu featuring modern Indian delicacies served in recycled dishes. Feast on small plates of Dabi Vada – chilled white lentil dumplings, cooling cumin yoghurt topped with masala chickpea giant caviar; Bhelpuri Chaat – puffed rice and chickpea vermicelli with spiced potatoes and coriander chutney; or tuck into The Bonda Bap – a South Indian spiced potato bomb in a pao bun, with green chutney, tamarind and masala peanut.
Summer festival terrace
Located in Carnaby Street’s Kingly Court, the Cinnamon Soho Summer Festival Terrace will be transformed into a sustainable eco-retreat. Shabby chic festoon lights will hang from recycled bicycle wheels adorning the walls whilst old coffee tins will get a second lease of life as flower pots dotted along each table. Bright wicker chairs with comfy cushions are perfect for soaking up the sun and whiling away long summer days. As the sun sets, the terrace will be illuminated with fairy lights and lanterns, the bperfect setting for enjoying sundowners and nibbles with friends.
