Chefs’ Knives – now there’s a new kid on the block

By James Russell: Chefs’ Knives – now there’s a new kid on the block

June 16, 2017

Leading manufacturer of steak knives, Tramontina, is bringing its expertise to bear with the launch of a range of high quality, fully forged chefs’ knives. The Century Collection knives will be exclusively distributed by Artis.  Each of the Century knives is made from a single block of steel (monobloc) and they are designed to deliver excellence in balance, precision and cut.

Tramontina century collection of chefs’ knives

Artis recognises that when a chef selects their knives is an intensely personal purchasing decision.  The market trend is towards fully forged knives, known as ‘monobloc’, meaning that each knife is forged from a single piece of steel. Forged knives have a reputation for excellent balance and durability. Century from Tramontina is a collection of fully forged knives. The steel in these knives is high grade DIN 1.4110, tempered by sub-zero process and stress relieving, which guarantees edge precision and a smooth cut. The polycarbonate handle with fiberglass injected in a single blade is light, anatomic and perfectly ergonomic, providing comfort, firmness and safety at the precise moment of cutting. The rivets used are made from aluminium making them more flexible and better able to be shaped in the handle, avoiding bumps caused by the traditional stainless steel. The century knives all have the V-sharped edge, which ensures a precise cut and excellent performance, even after being used many times.

There are 10 different pieces available in the Century Collection from Artis: 3” Paring e; 6” Utility knife; 8” Carving knife; 10” Chef’s knife; 10” Ham slicer; 9” Sashimi knife; 10” Sharpening steel; 6” Cleaver; 7” Santoku knife and a 6” Fillet knife.

The quality of these knives compares favourably with all the leading brands of professional knives, but chefs will be pleasantly surprised when it comes to pricing. Specimen list prices from Artis are as follows: Chef’s knife – £42.25; Utility knife – £21.23; Santoku ££32.50.  If you are interested in finding out more about these knives or would like to arrange a demonstration call Sharon Cudmore on 020 8391 8540.

The Century Collection is manufactured by Tramontina and may be found in the fully illustrated 2017 Artis catalogue, together with a huge range of tableware, glassware and backbar equipment. To receive your own personal copy, call 020 8391 5544. Alternatively, it is available to download online here.
