Hugh McGivern has been a chef for 30 years working all over the world. From Michelin restaurants in London to the personal chef to Dwayne “The Rock” Johnson and His Majesty King Abdullah II of Jordan where he also cooked for Barack Obama and most of the European Royal Families.

He is passionate about and heavily involved in nutrition and for the last 6 years he has been developing recipes for people with dementia, with the backing of 3 English Universities. His love of food stretches to the 4 corners of this earth and the specialities associated with each of them.

Working with Hugh we have put together a selection of some of his dishes for you to try and enjoy.

Breaded Goats Cheese Disc with Aioli

You will need

  • Discs of goats cheese (frozen)
  • Seasoned flour for coating
  • 1 egg – beaten
  • Milk
  • Fresh breadcrumbs
  • For the Aioli
  • 3 garlic cloves
  • Good quality mayonnaise

Method

  1. This is a really simple dish, served hot or cold. Ensure the goat’s cheese disc is frozen before use.
  2. Using three bowls, add some seasoned flour to one, a beaten egg with a little milk in the second and in the third, fresh breadcrumbs.
  3. Pass the discs through bowls 1, then 2 and 3 then place on a tray and return to the freezer.
  4. Peel and crush 3 garlic cloves into a paste QUICK TIP: add a little salt to the paste to save the natural oils in the garlic, then add the paste to 6 tbsp of good quality mayonnaise.
  5. Once your fryer has reached 180 degrees, drop one or two discs in and cook for 1 minute then flip over and cook for a further minute, remove and place on some kitchen towel to drain.
  6. Serve with a little mixed salad and a spoonful of the Aioli. Enjoy.
