Vegetarian Foodservice Recipe: Meat-free Mince and Lentil Sloppy Joes

Preparation time: 15 minutes

Vegan

Ingredients

  • 1 pack of Fry’s Meat-free Mince
  • 1 tsp (5 ml) olive oil
  • 1 (120 g) onion, finely chopped
  • 1 Tbsp (15 ml) garlic, finely chopped
  • 2 Tbsp (30 ml) cold water
  • 2 Tbsp (30 ml) tomato paste
  • 1 (4 g) chilli, finely chopped (optional)
  • 1 Tbsp (15 ml) sugar
  • 1 x 400 g tin chopped tomatoes
  • ½ C (125 ml / 90 g) cocktail tomatoes, halved
  • 1 Tbsp (15 ml) balsamic vinegar
  • 2 tsp (10 ml) ground cumin
  • 2 tsp (10 ml) smoked paprika
  • ⅔ C (160 ml) warm water
  • 1 x 400 g tin lentils, drained
  • Salt and pepper
  • 8 Hamburger rolls, sliced in half
  • 1½ (180 g) red onion, finely chopped
  • ¼ C (60 ml / 12 g) coriander leaves, finely chopped
  • Handful micro herbs

Method

  1. Heat the oil in a saucepan over medium heat. Add the onion and garlic and sauté for 2 minutes.
  2. Add the mince and fry for 2 minutes.
  3. Whisk the vegan gravy sauce (which comes in a sachet with the mince) with the cold water and pour it over the mince.
  4. Stir in the tomato paste, chilli, sugar, tinned tomatoes, cocktail tomatoes, balsamic vinegar, cumin, paprika and water. Simmer for 12-15 minutes until thickened.
  5. Stir in the lentils and season to taste.

To Serve

Assemble the Sloppy Joes by adding some of the mince mixture onto the bottom half of each roll.

Add a sprinkling of chopped onion, coriander and micro herbs and top it off with the top half of the roll.

TIP: This veggie mince filling also works great in wraps or with nachos. Just add more chilli if you want to give it an extra kick.
