As part of Ellenborough Park’s ongoing vision to be the leading luxury country house hotel in the UK, Matt Weedon has been appointed as Executive Chef. Matt joins Ellenborough Park in May and will oversee the Food & Beverage offering, including the existing 3AA Rosette Beaufort Dining Room, the Brasserie and all F&B operations.
Matt won his first Michelin Star as Head Chef at Glenapp Castle, Scotland which was consequently awarded Scotland’s Restaurant of the year by The Good Food Guide. Matt later moved to Lords of the Manor based in The Cotswolds in 2008 where he was appointed Executive Chef and given the opportunity to develop his own style. The restaurant won its first Michelin star just a year later.
Matt’s most recent position was at the highly successful Lamb Inn, Oxfordshire where he took over the tenancy alongside his wife.
On his appointment, Matt commented, “I’m thrilled to be joining Ellenborough Park at such an exciting time. It is an amazing time to be both a chef and a customer in the Cotswolds and there is a push towards more relaxed dining, but still with that high expectation of quality synonymous with the regions people and many eateries.”

Also joining Ellenborough Park this month is Louise Armstrong, as Operations Manager. Louise brings a breadth of experience, most recently at the critically acclaimed Cowley Manor. She will be taking the lead in all operational areas of Ellenborough Park, and supporting Oliver in the ongoing development of Gloucestershire’s only 5-star property.
