‘Healthy Me’ is a BaxterStorey initiative designed to support the health and wellbeing of customers, educating and engaging people about health and nutrition, so they can make better and more informed choices. As part of this, Gabriella Roberts, Head of Nutrition at BaxterStorey, created a series of healthy and delicious recipes. At 293 calories per portion and with no added sugar, these date and pecan squares provide the perfect alternative to a sweet mid-morning snack.

Ingredients
- 200g wholemeal flour
- 4g baking powder
- 150g very ripe banana, mashed
- 3 eggs, beaten
- 2g vanilla flavouring
- 250g pecans, chopped
- 260g dates, pitted and chopped
Method
- Pre-heat the oven to 170̊C
- Grease and line a 20 x 30cm baking tray with parchment paper
- Sift together the flour and baking powder, then set aside
- Cream together the mashed banana and eggs, then stir in the flour mixture
- Stir in the vanilla flavouring, pecans and dates
- Pour into the prepared tin an bake for 35 minutes
- Cut into 12 equal squares while the cake is still warm.
