For this month’s Image of The Month, I have featured an image that I captured whist working with my good friend Chef James Peck.
We have collaborated before with – Tandoori Scallops, Chickpeas, Lemon Foam, Raita & Poppy Seeds – back in August last year and I was very much looking forward to working with him again.
James Peck has been Cheffing for 10 years and is now Head chef at the The Carriage House in Highham Ferrers in his home town of Northamptonshire, which has been refurbished recently and only open 6 weeks.
James’ attention to detail and eye for combining colours and textures has always captured my lens.
This Image is entitled “Beetroot 6-ways” It showcases beetroot in the following forms:
- Roasted
- Pickled
- Crisps
- Foam
- Gel
- Powder
With a goats cheese mousse, Pomegranates and Shizu Cress.
James called it his “Little Show-off dish but with classic flavours”
