Coleslaw served up as Sambharo… Quick and Healthy
Serves 4 people
Ingredients
- 2 medium (150g) carrots grated
- 1 medium (400g) cabbage thinly sliced
- 1/2 tsp turmeric Powder
- 2 tbsp. lime Juice
- Pinch of sugar
- 1 tsp salt
- 2 tbsp. olive oil
- 1 tsp black mustard Seeds
- 1 tsp sesame seeds
- ¼ tsp asafoetida
- 8 curry Leaves
- 1 pomegranate seeds
Method
- Heat oil in a pan, add mustard & sesame seed. When starts crackling, add asafoetida & curry leaves.
- Add turmeric powder and cabbage and sauté for few seconds, add grated carrot, salt and mix well.
- Cook on medium flame for 2 minutes or till slightly cooked but remains crisp and crunchy, add lemon juice & Sugar.
- Garnish with fresh coriander & pomegranate
- Serve at room temperature
