Asian coleslaw by Daksha Mistry

Coleslaw served up as Sambharo… Quick and Healthy

Serves 4 people

Ingredients

  • 2 medium (150g) carrots grated
  • 1 medium (400g) cabbage thinly sliced
  • 1/2 tsp turmeric Powder
  • 2 tbsp. lime Juice
  • Pinch of sugar
  • 1 tsp salt
  • 2 tbsp. olive oil
  • 1 tsp black mustard Seeds
  • 1 tsp sesame seeds
  • ¼ tsp asafoetida
  • 8 curry Leaves
  • 1 pomegranate seeds

Method

  1. Heat oil in a pan, add mustard & sesame seed. When starts crackling, add asafoetida & curry leaves.
  2. Add turmeric powder and cabbage and sauté for few seconds, add grated carrot, salt and mix well.
  3. Cook on medium flame for 2 minutes or till slightly cooked but remains crisp and crunchy, add lemon juice & Sugar.
  4. Garnish with fresh coriander & pomegranate
  5. Serve at room temperature
