Image of the Month is all about engaging imagery, so apart from giving readers the basics of what the image is, where it was taken and why Majella chose it, we will let the images speak for themselves.
Hay Ice Cream, Jerusalem Artichoke, Cocoa nib, Smoked Meringue, Bitter Chocolate and Hay Ash
This week’s image is a dish created by Chef Anthony Raffo a Private Chef expanding his work portfolio through new techniques and flavour balances. The full title for Anthony’s dish is Hay Ice Cream, Jerusalem Artichoke, Cocoa nib, Smoked Meringue, Bitter Chocolate and Hay Ash.
During the image selection process Majella gave us some background:
“I met Anthony through friends just over a year ago and I just love his unique ideas. I always enjoy photographing and tasting his unusual collaborations of flavours and textures, they excite and surprise the palate with measured grace.
Anthony is always talking about chefs who inspire him especially Rene Redzepi from Noma, Lee Westcott from Typing Room and Martyn Meid from INK. I think quite a few chefs could be inspired by Anthony very soon, I certainly am, but it does make the shoot more difficult in achieving an image that is equal to the food. Happy to keep trying though.
I really enjoy shooting with Anthony especially with my macro-lens and I love working with small focal points. I adore the subdued mix of Colours and textures.
Anthony’s Inspiration: He mentioned that Michael O’Hare used Jerusalem Artichokes in a dessert on the Great British Menu and dipped them in Chocolate. Anthony caramelised his and made a puree with them.”
