Borough Market to launch Borough Plates

This January, Borough Market are to launch their very own restaurant, Borough Plates on Cathedral Street. Working alongside Paul Hannagen and the Cuisson team, the two-month pop-up will bring together resident traders and farmers to create a seasonal menu sourced from and solely using ingredients from the market itself.

The new opening will showcase Borough’s heritage of supporting the best in quality by inviting a different chef sourced from some of London’s most exciting restaurants each week to step into the kitchen to collaborate with the market traders. Guests can enjoy a selection of plates ranging from £6 – £16 including Charcuterie from Cannon & Cannon; Red Mullet caught by Sussex Fish served with Seared Scallop and Rainbow Chard; Salt Baked Celeriac, Soused Radish, Beaufort Cheese courtesy of Mons Cheesemongers and a Raw Milk Pannacotta from dairy farmers Hook and Son.

“With Borough Plates, this is a chance to showcase some of the amazing food sold at Borough Market, highlighting the wealth of ingredients and products available by inviting some of London’s hottest culinary talent to work hand in hand with traders to create something really special,” said Darren Heneghan MD of Borough Market. “The new pop-up presents an innovative step forward in the relationship between supplier and chef. We are excited to be working so closely with traders and cannot wait to give diners a behind-the-curtain look at how the dishes are put together,” added Paul Hannagen, founder of Cuisson.

The old trustee’s building is a fitting location for the restaurant, the nineteenth century red brick façade greeting guests through to the high-ceilinged lower floor which hosts a restaurant and bar, whilst up the sweeping oak staircase diners will be welcomed to a second, larger restaurant.
