Stuart Johnson, General Manager of Brown’s Hotel and Mark Hix, Director of Food are pleased to announce the appointment of Markus Savage as Restaurant Manager at Brown’s Hotel.  Having previously worked closely alongside Mark Hix during their time with Caprice Holdings Ltd, Markus is a welcome and timely addition to the team at HIX Mayfair and brings with him a wealth of experience garnered at some of London’s most iconic restaurants.

Markus’ career in hospitality began on the Queen Elizabeth 2 cruise liner where he worked for five years in The Queen’s Grill until 1997. When Markus made his début on the London restaurant scene he chose none other than The Ivy in which to progress from waiter to Assistant Manager. From there, having worked for sister restaurant The Wolseley, he was chosen to be part of the opening management team for The Delaunay for Rex Restaurants Associates. It was not until 2014 that Markus made the transition into the hotel sector of the hospitality industry when he helped open The Holborn Dining Room at Rosewood Hotel before gaining valuable experience as Director of Events Operations for the hotel.

Joining HIX Mayfair was a logical decision for Markus who has a passion for contemporary British cuisine and luxury dining. Already a month into his new position Markus is looking forward to a busy festive period and has great plans to ensure HIX Mayfair continues to become an increasingly popular evening destination. In 2017 Markus will join Mark Hix in hosting monthly dinners and Carving Masterclasses at Brown’s Hotel. Guests will have the opportunity to share dinner with Mark and Markus gaining insight into hosting the perfect dinner party, selecting the ideal wine pairings for each course and carving several cuts of meat.
