On Monday 14th November, Spanish restaurant group Brindisa Kitchens, will relaunch Shoreditch restaurant Tramontana with a new-look and new name, Tapas Brindisa Shoreditch, bringing the spirit of the flagship Borough Market restaurant to East London. Brindisa stems from the Spanish word “Brindis”, meaning to raise your glass to toast, and the restaurant will celebrate the Spanish producers, growers and suppliers that Brindisa has worked with for over 28 years.

Defined by founder and owner Monika Linton’s early years on Spain’s Eastern coast, Tapas Brindisa Shoreditch will specialise in Mediterranean, Eastern and Southern Spanish cuisine, from Cádiz to Catalonia. In harmony with the aspirations of Group Executive Chef Josep Carbonell and Group Head Chef Leonardo Rivera, who are both Catalans, together they have created a menu with inspiration rooted in the coastal villages, and rural areas of these regions. Traditional rice dishes and classic, coastal tapas with a focus on seafood will be menu staples. The restaurant’s hero dish will be paella marinera (prawn, cuttlefish and mussel bomba rice dish).

Tapas Brindisa Shoreditch will open at 11am serving a selection of baked goods and coffees.  A rotating lunch menu will include hot and cold bocadillos (sandwiches), marking the arrival of the famous Brindisa chorizo roll, a Borough Market favourite, to East London. A selection of vibrant seasonal salads brimming with pulses and vegetables, and savoury or sweet Catalan cocas (flatbreads) will also be available to enjoy with Spanish craft beer while eating in or to take away.

Tapas, picoteos and platters of charcuterie, cheese and cured fish will be served throughout the day offering Brindisa signatures such as Gordal olives, deep-fried Monte Enebro goat’s cheese, and croquetas de jamon, alongside new costal dishes including Nardín Boquerones (white marinated anchovies) and bacalao (fried salt cod served with black olive alioli) and an unmissable catch of the day. New desserts will include Flaó, an Ibizan aniseed and mint cheesecake, and bocadillo de helado con chocolate (bee pollen ice cream sandwich with chocolate sauce).

The transformation of Tapas Brindisa Shoreditch will be reflected in an extensive refurbishment and interior design overhaul by London-based design studio Creative Family. Sensitive both to the restaurant’s Spanish identity and location within the Shoreditch creative community, the expansive 114 cover space is versatile and flexible for eating and socialising at any time.

The new entrance of the restaurant has a large communal table with a café feel; suitable for coffee, quick lunches and a work-space for London’s freelancers. A long sweeping curved bar, allows dinners to sit and watch the theatre of the kitchen and the bustle of the bar, in true Barcelona fashion. The drinks list features Spain’s best distillers, brewers and vineyards with an eclectic selection of soft drinks. Bringing guests closer to the bodegas of Spain, a bespoke wine tap system offers a selection of premium wines by the glass.

On the restaurant relaunch, founder and owner Monika Linton, comments, “I am so excited that we can bring a refreshed finish and improved space with revitalised menus inspired by Spain’s east coast to this restaurant. The Brindisa Kitchens team are ready to welcome lovers of our food, old and new, and to continue to bring our Spanish soul to Shoreditch.”

Showcasing not only the quality produce for which Brindisa is known, but the gastronomic culture of Mediterranean Spain, Tapas Brindisa Shoreditch is set to become the home of authentic Spanish coastal cuisine in East London.
