This September sees the coming together of Xavier Rousset and Gearoid Devaney, two Master Sommeliers for the opening of the highly anticipated Cabotte. Based on the Burgundy region of France, Cabotte will be the perfect place to sample classic French cuisine with an elegant twist alongside an almighty collection of fine wines from Burgundy, France and beyond.
With the help of Burgundy expert Jason Haynes, who has been instrumental in getting 12 Burgundy producers including Sauzet, Gouges and De Montille to invest in Cabotte, the restaurant is set to be a truly unique and exciting concept in London. Located in the City at 48 Gresham Street, Cabotte will be ideally situated for business meetings and also offers two exclusive Private Dining Rooms which can be hired out for special events.
In the French language, a Cabotte is a small cottage-like dwelling which can be found in a vineyard and serves as a refuge for the workers. A place to not only store all the tools they need in order to create the country’s famous wine, but also to relax, unwind, and most importantly eat!
From September, you will be able to live as the French do and take refuge in Cabotte. The menu, created by Gordon Ramsay’s protégée Head Chef Ed Boarland will boast a combination of classic and modern French dishes. Ed has a wealth of experience in French fine dining that he brings with him to Cabotte; he started his career at The Waterside and then moved onto Gordon Ramsay on Royal Hospital Road before taking his passion for French food to the country itself for four years, working at Le Rafael in Paris and The Trianon Palace in Versailles.
Diners at Cabotte can expect dishes such as Oeuf Meurette, a delicately Poached Egg served alongside Smoked Bacon and Lie de Vin Sauce, as well as Jambon Persille, a Ham and Parsley Terrine with Apple and Raisin Chutney. There will also be several French classics that we all know and love including a mouth-watering Beef Cheek Bourguignon served en Cocotte with Savoy Cabbage and Smoked Free Range Bacon. If you’ve got room for dessert, the Tarte Tatin is not to be overlooked, with Ed himself praising the dish as his favourite.
As you would expect from two Master Sommeliers, the wine list is incredibly vast and incorporates an array of wines that will reflect the very best that France has to offer. As both Xavier and Gearoid have extensive experience and have won a staggering amount of awards and accolades between them including UK Sommelier of the Year, the wine list will be one that will appeal not only to wine enthusiasts but to those of us who appreciate the occasional tipple.
The wine list will focus mainly on the renowned Burgundy region, a region that is not only well loved by both Xavier and Gearoid but is well loved by anyone who knows their wine! The wine list consists of an impressive and palatable range of some 600 wines, 500 of which will be from the Burgundy region making Cabotte an unmissable experience in London. Wines can be enjoyed by the bottle or by the glass using the innovative and up to date Coravin system which enables Cabotte to serve you wine without having to unlock the bottle, meaning it is always fresh and full of finesse.
Both Xavier and Gearoid are exceptionally excited for the launch of Cabotte and are proud to have put together a management team who all share a passion for wine. The stellar line up at Cabotte includes Virgile Degrez as Restaurant Manager, Head Sommelier Zigmars Grinbergs and Sarah Kinsey as Events Manager who have all previously worked as Sommeliers in London restaurants.
It may not actually be in the middle of a vineyard, but from September you won’t find anything more authentically French than Cabotte in London.
