By James Russell: Chefs Vegetarian Recipe of the Week, Grilled Polony and Hummus Sandwich

This simple vegan recipe is perfect for school lunch boxes or for those who are on the go.

Serves 1

Cooking time 15 minutes

Vegan

Ingredients

  • 4 thin slices of Fry’s Polony/Slicing Sausage
  • 2 slices of a Whole grain bread
  • 2 tsp. Hummus
  • 1/4 small Onion, finely chopped
  • ½ a Green chilli, finely chopped
  • ½ a tsp. Olive oil

Method

  1. Top a slice of bread with polony, hummus, onion and green chilli.
  2. Add the second piece of bread to make a sandwich.
  3. Brush outside of sandwich with olive oil and grill it in a sauté pan or on a griddle until bread is toasty golden brown.
