Healthy Me is a BaxterStorey campaign designed to support the health and wellbeing of customers, educating and engaging people about health and nutrition, so they can make better and more informed choices. As part of this campaign, Gabriella Roberts, Head of Nutrition at BaxterStorey, created a series of healthy and delicious recipes. These wholemeal blueberry muffins are a more nutritious substitute for the classic muffin, with only 260 kcals, 4.3g saturated fat and 14.7g sugar.

Ingredients
- 3 large eggs
- 225ml low fat natural yoghurt
- 75g butter
- 3 ripe bananas
- 4 tbsp honey
- 1 tsp vanilla extract
- 300g wholemeal flour
- 75g rolled oats
- 2 tsp baking powder
- 2 tsp bicarbonate of soda
- 2 tsp cinnamon
- 300g blueberries
- 3 tbsp mixed seeds
Method
- Pre-heat the oven to 180°C (fan 160 C, Gas mark 4).
- Line a 12-hole muffin tin with large muffin cases.
- In a bowl, mix the eggs, yoghurt, butter, mashed banana, honey and vanilla extract together.
- In a separate bowl, add the remaining ingredients, except for the seeds, and combine.
- Pour the wet ingredients into the dry and mix until you have a smooth batter (do not over mix).
- Divide the batter between the cases and sprinkle with seeds.
- Bake for 25-30 minutes, until golden and well risen.
- Once cooked, transfer to a wire rack to cool.
