This summer, The Rib Room Bar and Terrace is set to be transformed into a Cuban hideaway.  Featuring carefully crafted cocktails, inventive bar bites and live Latin music, the BACARDÍ Summer Terrace will bring to life the heritage of BACARDÍ, the world’s favourite rum, in the heart of London’s chic Knightsbridge district.

Open from 20 May to 30 August from 12pm daily, the BACARDÍ Summer Terrace will see The Rib Room Bar and heated Terrace adorned with tropical florals, BACARDÍ heritage photography, vintage cocktailware and other touches evoking the Santiago de Cuba origins of BACARDÍ.

From 7.30pm to 11pm on Wednesdays to Saturdays, the BACARDÍ Summer Terrace will also come alive with the sounds of Latin swing, soul and jazz courtesy of a live band.

Sporting bright red blouses, red braces and bowties, The Rib Room bar team will be serving up a sizzling selection of summer cocktails to guests.  Signature serves include the 25 Degrees Colada – so called as the average temperature in Cuba is 25°C – which is a twist on the classic Pina Colada, blending BACARDÍ Carta Oro with guava juice, coconut cream, Demerara syrup, double cream and a sprinkle of coconut flakes; the zesty Rumba Spritz which combines BACARDÍ Carta Blanca and orange bitters with blood orange syrup, lime and Pedrino tonic; the Mentirita – another twist on a classic, the Cuba Libre – with BACARDÍ Ocho Años, Coca-cola reduction, orange bitters and Pimento bitters; and the Papa Was Right, an exotic combination of BACARDÍ Carta Blanca, pomegranate and Maraschino liqueur finished with a generous pour of pineapple shrub and grapefruit juice.

To accompany the drinks, Rib Room Head Chef Ian Rudge has created a menu of light bites featuring classic Latin flavours, including Beef empanadas served with jalapeño sour cream; Cuban sandwiches made with slow-cooked spiced pork and ham; Papas rellenas – braised lamb neck, mashed potatoes and a black bean dip; and Camarones criollos – grilled king prawns in a tomato and chilli sauce with coriander.

Guests on the outdoor Terrace can also enjoy one of the wide selection of Cuban, New World and special collection rare cigars from The Rib Room Bar’s extensive list.

For the cocktail aficionado, the BACARDÍ Summer Terrace will host a mixology classes every Tuesday evening.  Open to all, the informal evenings will offer the opportunity to learn to make some of the cocktails on the menu under the guidance of BACARDÍ experts and The Rib Room’s skilled mixology team.
