Healthy & refreshing summer salad – Put together in minutes

Serves 2 people

Ingredients

No need to use pestle and mortar

Dressing

  • 1 clove garlic chopped
  • 1 fresh red chilli or to taste
  • 1 tbsp. fish sauce OR just use soy sauce for vegetarians
  • 3 tbsp soya sauce
  • 1 tbsp. palm sugar
  • 3 tbsp. rapeseed oil
  • 3 tbsp. lime juice
  • Handful of fresh Thai basil

Salad

  • 1 medium green papaya – shredded
  • 6 cherry tomatoes cut into half
  • 50g green beans – cut into 1-inch lengths balanced and refreshed in ice water
  • 50g bean sprouts blanched in hot water and refreshed in ice water
  • 3 spring onions, sliced very thinly
  • 50g roasted peanuts crushed
  • Few leafs thai basil for garnish

Method

  1. Make the dressing by putting all the ingredients into a food processor, whizz until all combined. Keep aside in a small Jar
  2. Place all the prepared vegetables in a container mixed well.  Keep refrigerated until ready to take on your trip or just enjoying at home.
  3. When ready to eat pour the dressing over the vegetables, garnish with crushed peanut and thai basil.
  4. You can enjoy this dish anywhere……
