From the canals of Venice to the beautiful island of Capri, the team have travelled from restaurant to restaurant to discover the remarkable and diverse landscape of the modern Italian food scene.
The app comes from Great British Chefs, who have launched numerous award-winning apps. The free iPhone/iPad app (‘Great Italian Chefs – Recipes’) will contain over 110 recipes from 26 passionate and talented Italian chefs who between them hold over 40 Michelin stars. Built for ambitious home cooks, anyone who loves Italy and all who appreciate great food, the recipes, aim to challenge assumptions of what Italian cuisine is about.
CEO and founder of Great British Chefs and Great Italian Chefs, Ollie Lloyd said: ‘For too long Italian food has been misunderstood, leading to poor imitations and skewed views of its cuisine around the world. Mention Italian dishes and the first thing most people think of are pizza, pasta and risotto, but the recipes we’ve collected in the app might be a bit more modern and unusual than you’d expect.
‘While there are a good number of recipes for pasta or risotto and plenty of dishes featuring Italian staple ingredients like tomatoes and mozzarella, we’ve delved deeper into the country’s food scene to unearth some forgotten and undiscovered gems. It’s a very exciting time for contemporary Italian cuisine – a new wave of produce-driven, seasonally-led chefs are heralding a shift towards using specific ingredients in their cooking, and the world is taking notice.’
Many of the recipes transform traditional Italian ingredients into artistic masterpieces, which challenge all of the senses. For example, the multi-Michelin-starred Cerea Brothers serve dishes such as ‘Fake mozzarella’, a sweet mascarpone mousse with cherry sauce. Fabrizio Marino’s bright and bold Butterfly salad is made from radicchio and cabbage leaves and truly elevates the concept of salad.
It’s long been appreciated that we eat with our eyes as much as our tastebuds. The public are sharing photos of food on social media as frequently as they share pictures of family and pets. The app’s recipes are for those who love fine art as much as great food. The dishes, with their beautiful presentation and innovative pairings of flavours and ingredients, will delight and surprise in equal measure.
