Ingredients

  • Avocado
  • Red onion
  • Cherry tomatoes
  • Lemon
  • Vegan mayo
  • Paprika
  • Salt

Method

  1. Peel and chop the avocado into chunky pieces.
  2. Chop the red onion and cherry tomatoes finely.
  3. Add the avocado, onion and tomatoes into a mixing bowl.
  4. Squirt a small amount of fresh lemon juice into the bowl and add a sprinkle of salt.
  5. Depending on how you prefer your guac add 2-4 tablespoons of vegan mayo and stir well.
  6. Spoon out of the mixing bowl and onto a serving plate/bowl and garnish with paprika.
  7. Voila!
