Last December, Daniel Clifford launched his newest venture, The Flitch of Bacon, which he described as ‘a must buy’ when the beautiful old building was put up for sale, and it’s clear from these pictures that he has now created a  ‘must visit’ destination. H&C News looks forward to receiving news of the dining experiences of visitors in the weeks ahead.

The Flitch of Bacon has opened in Little Dunmow, Essex, a mere stone’s throw from Daniel’s own home. Daniel is aiming to bring modern twists on British cuisine to the locals as well as an interesting and diverse drinks and wine list incorporating many local breweries.

The Flitch of Bacon is the only pub in the UK of its name. With it being so unique and interesting there was no way it was going to be changed so Daniel decided to embrace the history and local community.

The setting

The Flitch of Bacon is found in Little Dunmow; a small rural village in Essex. Its roots date back to the early eleventh century when the Little Dunmow Parish Church was formed, a building that still stands today.

Many of the buildings within the village – including The Flitch of Bacon itself – date back to the fourteenth and fifteenth centuries with stunning design and architecture enduring the test of time.

The building

The Flitch of Bacon building has its roots deep in the history of Little Dunmow. The exact date it was built is unknown but it is believed to have been constructed in the sixteenth century and has stood the test of time and survived world wars.

It is a beautiful Grade II listed building and during the current restoration close attention was paid to ensure original structures and features have remained in place. The building has undergone extensive refurbishment work with the inside getting completely renovated.

The building and exterior will boast brand new features and more than a few surprises along the way. The aim was always to create something that would be a unique destination in Essex, welcoming people from the country far and wide and ensuring it was worth the trip.

The Chef Patron – Daniel Gill

Having cut his teeth at various top level restaurants in London it was at Midsummer House that Dan found his home for almost three years. Taking the position of head chef, Dan worked very closely with Daniel Clifford creating new, enduring classic dishes for Midsummer House as well as proving to be an invaluable resource for Daniel’s various television commitments and outside events.

After proving his worth at Midsummer House Dan has been given the keys to The Flitch of Bacon with complete control over the various menus and sourcing of top quality, local produce. Menus have been tirelessly worked on for months by Dan leading up to the opening of The Flitch and there are some classic flavours mixed in with a nous for presentation and modern techniques.
