Ingredients
- 1 box Fry’s Golden Crumbed Schnitizels
- Half cup rice, cooked
- 3 onions, chopped
- 10ml crushed ginger and garlic mix
- 6tsp green curry paste
- 2 tins coconut milk or coconut cream
- 2tblsp peanut butter, heaped
- Half red pepper, chopped
- Half green pepper, chopped
- Quarter pineapple, chopped
- 1 stick celery, chopped
- 1tsp Chinese 5 spice
- Handful peanuts
- 1tsp sugar
Method
- Grill Fry’s Golden Crumbed Schnitzels and cut into pieces.
- Saute onions in ginger and garlic until lightly borwned.
- Add curry paste and coconut milk.
- Allow to simmer until coconut oil rises to the surface in the meantime – saute red and green peppers, pineapple and celery and add to cooked rice.
- Add Chinese 5 spice.
- Stir in peanut butter, peanuts, sugar and Schnitzels to onion mix.
- Serve Schnitzels on bed of prepared rice.
