Matt Byne, Director of Food at contract caterer Just Hospitality, will on November 24thcompete in the final Open Kitchen Live menu development day of 2015.
Open Kitchen Live is an opportunity for chefs to come together, test new dishes on their professional peers and submit them to a panel of judges, who will declare a winner. It aims to promote experimentation and collaboration within the profession.
At the upcoming event, Byne will prepare za’atar spiced mackerel, ancient grains, hass yoghurt, flaxseed and fennel crisps. The dish is expanded from a recipe for ancient grain salad that Byne designed for Just Hospitality’s tenth anniversary cookbook.
According to Byne “at JH we have a set of goals in every dish we produce. They are: to be interesting, healthy, tasty and to tell a story. In this dish the ‘story’ part is the ancient grains, part of a long history of people growing, preparing and eating dishes in ever-changing ways.”
This new variation on the dish also has specific technical challenges. “The big challenges will be not to overpower the fish with the spices, and to make sure the fennel crisps are super crunchy.”
