A fresh truffle has a pungent, earthy aroma of sulphurous musk and tastes like nothing else. The truffle season is upon us and to celebrate this delicious and rare autumn treasure, Chamberlain’s Restaurant in Leadenhall Market – a favourite dining haunt of the City cognoscenti – is hosting a special Truffle Celebration menu from 16-27 November.
The menu has a truffle dish for each course, using Autumn, Winter and White truffles.
Starting their meal with the autumn truffle, diners will have baked Londonshire cheese, Autumn truffle and crisp brioche crust and slow cooked onion velouté. Next there is roasted grey-legged (or English) partridge, White truffle and hazelnuts, served with pear, black cabbage, pearl barley and champagne and foie gras cream.
And, to finish the meal in true truffle style, Manjari chocolate fondant, Winter truffle and tonka bean ice cream, winter truffle fudge and winter truffle macaroon. For real truffle aficionados, an extra treat is in store as freshly grated truffle will be offered with the starter and the dessert.
“The truffle is one of my favourite ingredients,” says chef patron Andrew Jones, “It may look unassuming, but it is a true culinary star. In the space of three months each autumn we have three different varieties available. They don’t come cheap, but to be honest, this is the same with all ingredients. When you want to use or eat the best, you have to be prepared to pay a premium for top quality. I’m pleased to say that this year’s truffles are superb, hence our Truffle Celebration.”
The Truffle Celebration menu costs £65 for three courses and can be paired with matching wines for an additional £30.
