The kitchen at Aiden Byrne’s gastro pub, The Church Green, is substantially smaller than the one at prestigious Manchester House, which he co-owns with Living Ventures, but the quality of the food it produces is equally superb.
“When space is limited, chefs tend to design their menus around the core equipment they have – but there are solutions,” he explains. “One incredibly useful item is the Pantheon Induction Hob. I have two and use them constantly. They can be sited anywhere – including front of house – as long as there’s an available power point – and, of course, they can be used for any type of cooking without generating unnecessary heat. They’re reliable, easy to keep clean and give us the means to try out different dishes on the menu without overwhelming the main cooking line.”
The hobs’ portability has proven very useful for Aiden’s work both in and out of The Church Green and he regularly takes one with him when he cooks at food festivals because, as he puts it “I can just pull it out of my back pocket and I’m ready to cook!”
