Modern Asian restaurant Bó Drake has appointed a new Head Chef, with Matteo Frugone re-joining the kitchen having helped launch the restaurant earlier this year. Having worked at one Michelin-starred Antinè and two Michelin-starred Trussardi alla Scala in his native Italy, Frugone spent time in the kitchens at Hibiscus and Kurobuta before returning to the Bó Drake team as Head Chef.
Putting his own stamp on the menu, Frugone will bring a contemporary European accent to the restaurant’s Asian-influenced food. New dishes include the Scottish Sirloin Tataki with Ponzu, Truffled Shitake and Tofu Cream, KFC (Korean Fried Chicken) with Soy Garlic Grapes and Rosemary, Smoked Atlantic King Scallop with Girolles, Chilli and Kimchi Buttermilk Honey and Whole Smoked Poussin with Carrots, Radish and Smoker Reduction.
“My food is a product of my experience in various cuisines, including French, Italian, modern European and Asian,” says Frugone. “My dream is to see the restaurant become one of the best modern Asian choices in London, a target we can reach by working with sweat, tears and creativity.”
Opened by restaurateur Jan Lee in February 2015, Bó Drake is an intimate restaurant in the heart of Soho, accommodating up to 60 guests across a seated bar, an arrangement of low- level tables and a cosy rear dining area. Prices range from £7 for small plates to £14 for mains, alongside a carefully curated cocktail list from head barman Darren Farmer.
