Arbutus, the Michelin starred restaurant on Frith Street, Soho will launch a new bar on 14th October cheekily titled: Les Couilles du Chien. The arrival will usher in a bar menu designed by Chef Patron Anthony Demetre, with wine pairings from co-founder Will Smith.
Purveyors of contemporary bistronomy, Arbutus will continue to champion luxurious yet unpretentious and affordable dishes. Diners may sample Warm Pig’s Head with Spiced Mayonnaise alongside a glass of La Bota No 52 from Jerez, Spain, Crisp Boneless ‘Label Anglais’ Chicken Wings with Texas Ranger, a Chipotle Chilli Porter from Copenhagen or A Load of ‘Bollocks’ – crisp lamb testicles and tripe with an organic Bobastrell from Murcia, Spain.
Wine by the Coravin wine glass
The new bar will also take advantage of the Coravin wine method, serving wine by the glass from impressive bottles including the biodynamic Lion’s Tooth Chardonnay, New Zealand, Condreiu ‘Chaillet’ a Viognier from the Rhone Valley and Andromeda Pinot Noir by Devil’s Gulch Vineyard, California. Creative cocktails will also be served, including the Prune Negroni – St George Terroir Gin Infused with Prunes, Vermut Negro, Campari, Orange Peel – and Give Peas a Chance, made from Fresh Pea & Basil Infused Reyka Vodka, Lillet Blanc, and Lemon Peel.
A long, polished white stone bar will stretch the length of the space, lined with leather topped hairpin stools. There will be French Gray walls, artwork from Keith Coventry and red neon signage displaying the bar’s name against Dutch tile-patterned wallpaper creating a cosy yet contemporary feel to the space.
