Mark Birchall has announced that he will launch an exciting new restaurant with rooms in summer 2016.
The chef, who was most recently Executive Chef, with Simon Rogan, at Michelin 2-starred L’Enclume in Cartmel, Cumbria, is actively working on the plans for the development of Moor Hall, an impressive Grade II listed gentry house of mid–16th century origin set within a five acre site in Aughton, near the ancient market town of Ormskirk, in West Lancashire.
The magnificent building, with its Tudor origins, will be fully restored and re-designed to a very high standard in partnership with Andy and Tracey Bell. There will be a 50 seat restaurant, and a private dining room for 12. Seven large bedrooms will be created (five in the main house, and two in the gatehouse nearby). Overall, the setting of Moor Hall will provide an idyllic rural destination for guests from throughout the northwest (just 25 minutes from Liverpool, and 45 minutes from Manchester), London and internationally.
Modern British cuisine
Mark’s menus will showcase his own style of modern British cuisine, reflecting the broad culinary experience he has garnered over the last 15 years. His plans for Moor Hall also include the transformation of additional buildings within the grounds (lodge, barns, stables) on the grounds for extensive further dining and kitchen operations, as well as developing the gardens, orchards and small lake.
Born in Chorley, Lancashire, Mark began his career working at The Walnut Tree in Abergavenny, Wales, with Franco Taruschio, and then at Northcote Manor with Nigel Haworth.
During his tenure at L’Enclume from 2006 to 2015, Mark helped guide the team to five AA Rosettes, two Michelin stars, and the UK’s best restaurant in the Waitrose Good Food Guide with a full 10/10 rating. He also won the Roux Scholarship in 2011, the premier competition for chefs in the UK, which enabled him to spend time at Michelin 3-starred El Celler de Can Roca in Spain.
