Ingredients
- 1 box FRY’S SPICY SAUSAGES, cubed
- 15ml olive oil
- 1 onion, finely chopped
- 2 cloves garlic, crushed
- 2 red chillies, finely chopped
- 3 carrots, sliced
- 500ml vegetable stock
- 1x 410g tin chopped tomatoes
- Sugar, for seasoning
- Salt and Pepper
- 1x 410g tin kidney beans
- 1x 410g tin butter beans
- 4 tsp. coriander, roughly chopped for garnish
Method
- Heat the oil in a large pot, over medium heat.
- Add onion and fry for 5 minutes.
- Add garlic and chilli and fry for a further minute.
- Add carrots, vegetables stock and tomatoes and bring to the boil.
- Allow to simmer over a low heat for 25 minutes and season well with sugar, salt and pepper.
- Stir in the beans and the FRY’S SPICY SAUSAGES and allow to simmer for a further 10 minutes.
