Time: 50 mins, Serves: 4

Ingredients

  • 1 box FRY’S SPICY SAUSAGES, cubed
  • 15ml olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 2 red chillies, finely chopped
  • 3 carrots, sliced
  • 500ml vegetable stock
  • 1x 410g tin chopped tomatoes
  • Sugar, for seasoning
  • Salt and Pepper
  • 1x 410g tin kidney beans
  • 1x 410g tin butter beans
  • 4 tsp. coriander, roughly chopped for garnish

Method

  1. Heat the oil in a large pot, over medium heat.
  2. Add onion and fry for 5 minutes.
  3. Add garlic and chilli and fry for a further minute.
  4. Add carrots, vegetables stock and tomatoes and bring to the boil.
  5. Allow to simmer over a low heat for 25 minutes and season well with sugar, salt and pepper.
  6. Stir in the beans and the FRY’S SPICY SAUSAGES and allow to simmer for a further 10 minutes.
