The Three Horseshoes Country Inn & Spa has announced its new fine dining experience, The Stables. The newly appointed Executive Chef, Gary Woolliscroft along with the current Head Chef, Matt Brock have together added another dimension to the already outstanding dining choices.

Using his finest culinary skills, Gary has devised a menu full of innovative dishes which set The Stables apart from other dining experiences. The restaurant boasts a 2 AA Rosette Award for culinary excellence, which recognises high standard, consistency and precision, serving food prepared with care and with evident selection of fresh, seasonal ingredients.

Gary Woolliscroft

Gary Woolliscroft is the newly appointed Executive Chef at the Three Horseshoes Country Inn & Spa, where he hopes to take the food experience at the venue further with new modern techniques using local fresh quality ingredients, but still providing for the ideals of local customers.

Previously, Gary has worked as senior sous chef alongside ‘Great British Menu Chef’ Chris Holland at the Alderly Edge Hotel. During this time Chris & Gary achieved 3 AA Rosettes and he developed excellent modern cooking techniques.

The menu

Starter Courses include –

  • Wye Valley Asparagus “Three Ways” Smoked Peanuts & Truffle Glace
  • Organic Cured Salmon in Hendricks Gin, Yuzu Pickled Cucumber, Crayfish Tar Tar
  • First of the Season Morels, Crispy Confit Chicken Wing, Orzo Pasta & Wild Garlic

Main Courses include –

  • Mature Fillet of Staffordshire Beef, Textures of onion, Ox Cheek & Poached Morels.
  • Presentation of Spring Lamb, British Beetroot, Scorched Leeks & Basil.
  • Masala Spiced Monkfish, Roasted Cauliflower, Brown Shrimp Risotto & Verjus
  • Grilled Fillet of Line Caught Sea Bass, Roasted Scallops, Caramelised Baby Gem, Fennel & Orange

Desserts include –

  • Toffee Apple Sponge, Cinder Toffee Ice Cream, Butterscotch Cream & Apple Foam
  • Melting Chocolate Orange Fondant, Chocolate Soil, Orange Textures
  • Mascarpone & Yogurt Sabayon, Textures of pistachio

The tastefully decorated dining room is spacious yet personalised and guests can feel completely relaxed in the cosy atmosphere and enjoy the mouth-watering dishes that consist of exciting Modern English & New World flavours. Three Horseshoes Country Inn & Spa pride themselves on being able to prepare and cook everything from fresh ingredients that are seasonal and sourced from local suppliers. In support of the local farming community, they use both farm assured and outdoor reared meat for both superior flavour and respect for animal welfare.
