This July will see the launch of M Restaurant’s brand new summer menu in their RAW restaurant. Created by Executive Chef Michael Reid, who has recently finished a two-year stint with Shannon Bennett in Melbourne and Head Chef Jarad McCarroll, who joined M in October from Chiltern Firehouse. The RAW summer menu has been crafted to celebrate the purity of the finest RAW ingredients, cooked and served on small plates to savour or share.

Delectable dishes…

The menu will feature a selection of delectable dishes in keeping with the restaurant’s theme. Diners will be offered the chance to taste an array of delicious and nutritious quinoa sushi, something that is not readily available in the UK, with fillings including swordfish and tuna.

Further dishes on the menu include homemade South-African style biltong, kangaroo, and beautiful boa buns. Caviar will also appear on a selection of the sushi dishes and as a Volzhenka Beluga Platter, which features lobster, a vodka crème fraiche and champagne jelly.

M RAW will also be catering for all the meat lovers out there, and giving diners the opportunity to taste the finest Blackmore wagyu sirloin steak (grade 9++). The waygu will be served in two ways as both a sashimi and on the ‘Hot Stone’ section of the menu.

Ambitious opening

M, the multi-faceted venue created by Martin Williams opened in December 2014 and has enjoyed both critical acclaim and been hailed as one of the most ambitious openings of the year. The venue houses two restaurants: GRILL and RAW, a wine tasting room: M WINE and a cocktail bar; M BAR. It also hosts a number of Private Dining rooms and a secret VIP room: M DEN.

Martin Williams states, “We have gained a great reputation in a very short space of time for serving the highest quality ingredients from around the globe. Our RAW summer menu continues in this vein, with our high protein, healthy summer menu. Jarad and Michael are the kings of creating the most beautiful foods, which are both taste sensations and complex in textures.”
