From Fish and Chips to Vintage Salt

By James Russell: From Fish and Chips to Vintage Salt

June 19, 2015

Des McDonald’s Old Broad Street restaurant, ‘Fish & Chips by Des McDonald’, has changed its name to Vintage Salt. The change follows the huge success of McDonald’s latest restaurant opening at Selfridges, On the Roof with Vintage Salt.  Since opening at the beginning of May, Vintage Salt has been fully booked, serving seasonal British dishes to more than 500 diners per day.

Evolution to sophisticated seafood restaurant

The name change also reflects the evolution of Fish & Chips by Des McDonald, from serving ‘posh fish and chips’ to the sophisticated seafood restaurant, bar and terrace it is today.   As well as serving fresh, sustainable haddock and cod with hand cut chips, Head Chef Steve Wilson (previously of Scott’s and Daphne’s) will introduce Cornish meat and fish to the menu.

Dishes will include; Sea reared trout served with charred asparagus, lemon and herbs, Cornish lamb chops with spring vegetables and green sauce and Cornish shrimp burger served with spicy tartare sauce. This will continue the Cornish influence that is so successful at On the Roof with Vintage Salt.

The Bar at Vintage Salt

The Bar at Vintage Salt is also a huge success, serving over 200 drinkers per day on the terrace.  The newly named Vintage Salt will take inspiration from this outside space and serve summer cocktails including Pomegranate Tree – a mix of Havana 7 yr vanilla liqueur, pomegranate and mint and Vintage Salt – a blend of Courvoisier VS, pear brandy, passion fruit and cinnamon on the newly opened terrace.  A menu of chilled red, white and rose wine is also on offer, as well as a selection of champagne and sparkling wine, including Gusbourne Estate and Skinny Champagne.

Des McDonald comments: “The name change to Vintage Salt is the next logical step for the Fish & Chip brand.  It is more reflective of what the City restaurant has become and will continue to evolve too, especially as we look to expand and open further Vintage Salt restaurants outside London.”

The Fish & Chip Shop in Islington on Upper Street will also be changing its name to Vintage Salt.  This will happen next month as part of a gradual transition for the brand.
