By James Russell: How’s this for Dinner? Meatballs with Spicy Tomato Sauce

Remember that the better quality beef you buy, the better the meat balls will taste – and also less fat will come out of them as they cook, making for a better mouth feel. I use steak mince for these meat balls – they are delicious served on a bed of wholemeal rice, but work as well, served on a bed of spaghetti or couscous!

You can also use lamb mince – for variety, try adding a little fresh chopped mint in with the other herbs – to bring out the flavour of the lamb.

Serves 4 – 6

Ingredients

  • 450g lean minced beef
  • 1 onion, finely chopped
  • 1 tbsp dried mixed herbs
  • 1 egg, well beaten

Sauce:

  • 200ml beef stock (can be made with a stock cube)
  • 1 – 2 tbsps horseradish sauce – according to taste, as it’s got a strong flavour
  • 1 tbsp Worcestershire sauce
  • 1 tbsp tomato puree
  • 2 tsps cornflour
  • salt and black pepper to taste
  • fresh chopped parsley to garnish

Cooking Instructions for 1100 watt oven

Mix together the meat, onion, herbs and beaten egg. Dust your hands with flour, then shape meat mixture into 16 small evenly sized balls. Arrange the meat balls in a large shallow microwaveable dish and cook, uncovered for 6 minutes on HIGH power in an 1100 watt oven. Turn them all over and re-arrange meatballs after 3 minutes.

While they are cooking, combine the remaining ingredients for the sauce, then pour around the meatballs. Cover dish and continue cooking for 10 minutes on MEDIUM power (70% – 735 watts), stirring well and re-arranging meatballs occasionally during cooking time.

Season sauce to taste and serve garnished with parsley, accompanied with cooked rice, couscous or spaghetti.

* If the sauce is too spicy or thick for your taste, dilute halfway through the cooking time with a little beef stock.

1500 watt oven

Cook meatballs for 5 minutes on MEDIUM power (70% – 1050 watts).

Then cook meatballs and sauce for a further 10 minutes on LOW power (50% – 1050 watts) until thoroughly cooked through.

1850 watt oven

Cook meatballs for 6 minutes on LOW power (50% – 950 watts).

Then cook meatballs and sauce for a further 8 minutes on LOW power (50% – 935 watts) until thoroughly cooked through.

Accompaniments

Cooked rice, couscous or spaghetti.
