Substitute Quorn for the ham, if you want to go vegetarian with this recipe for a really hearty, colourful meal – and try serving it on a bed of ‘tomato’ flavoured pasta for a real change.

Serves 4

Ingredients

  • 100g dry pasta– spaghetti or tagliatelle works best
  • ½ red pepper
  • ½ green pepper
  • 1 red onion, cut into slices
  • 100g broccoli, cut into small florets
  • 2 cloves garlic, crushed
  • 25g butter
  • 1 tsp dried oregano
  • 100g small button mushrooms, washed and halved
  • 200g cooked leg ham, cut into 2.5 cm chunks
  • 2 tbsps grated parmesan cheese

Cooking Instructions

  1. Cook the pasta on the top of the stove, in a saucepan of boiling water, according to pack instructions.
  2. While the pasta is cooking prepare the topping in an 1100 watt microwave oven.
  3. Roughly chop the peppers into large chunks, put into a 1 litre oven-proof dish with the sliced onion, broccoli, garlic and the butter. Cover dish with a well-fitting lid or cling wrap and cook for 3 minutes on HIGH power, stirring once during cooking to coat all the vegetables in the sizzling butter.
  4. Stir in the oregano and the mushrooms, re-cover dish and continue to cook for a further 2 ½ – 3 minutes on HIGH power until vegetables are just ‘al-dente’ – cooked , but offering a little resistance when pierced with a knife.
  5. Stir in the chopped ham, re-cover dish, return dish to the oven and cook for 2 minutes on MEDIUM power (70% – 735 watts). Stir in the grated parmesan cheese.
  6. Leave to stand while draining the pasta. Transfer the pasta to a large, warm serving plate and serve immediately topped with the ‘stir fry’ mixture.

1500 watt oven

  • Cook peppers for 3 minutes on MEDIUM power (70% – 1050 watts).
  • Add mushrooms. Cook for 2 – 3 minutes on MEDIUM power (70% – 1050 watts).
  • Add ham. Cook for 2 minutes on MEDIUM power (70% – 1050 watts).

1850 watt oven

  • Cook peppers for 3 minutes on LOW power (50% -925 watts).
  • Add mushrooms. Cook for 2 – 3 minutes on LOW power (50% – 925 watts).
  • Add ham. Cook for 2 minutes on LOW power (50% – 925 watts).
