The new Superbags are available in either a 100 or 200 micron* option and will help ensure consommés, infusions, stocks and broths can be clarified perfectly. However, they have multiple uses beyond this and inventive chefs and bartenders can use them to strain infusions and decant wines. They can also be filled with purées and immediately squeezed to release a solids-free liquid, a technique that was used at El Bulli to extract fresh almond milk. Alternatively, gravity will slowly release liquids from purées placed in the bags to make delicious, intensely flavoured ‘waters’.
Superbags have a generous, 2 litre capacity and are made from tough, dishwasher-safe nylon strands, so can be safely re-used time after time for different foods without fear of flavour contamination, providing a practical and hygienic alternative to muslin.

*A micron (short for micrometre) is the measure of length most frequently used to describe tiny particle size and a single micron is defined as one-millionth of a metre.
