This lovely pie serves 4 large or 6 smaller portions and always looks and tastes great – summer or winter, whatever fish you decide to use in it.
Ingredients
For the topping:
- 650g potato, peeled, cut into 2 – 3 cm chunks and well washed
- Juice and finely grated rind of 1 lemon
- 3 – 4 tbsps milk
- 50g butter
For the filling:
- 800g fresh fish – this could be a mixture of cod, smoked haddock, whiting, salmon and / or raw prawns, skinned, boned and cut into large chunks, juice and finely grated rind of a lemon
- ½ bunch spring onions, roughly chopped
- 3 stalks celery, roughly chopped
- 60g plain flour
- 150ml fish stock (can be made with stock cube and water)
- 150ml milk
- 60ml dry white wine
- 2 tbsp fresh chopped parsley
- Salt and black pepper to taste
- 50g mature cheddar cheese, grated
Cooking Instructions for 1100 watt oven
- Place the prepared potatoes in a large microwaveable dish, cover with a well-fitting lid or cling wrap and cook for 7 – 8 minutes, on HIGH power, in an 1100 watt oven, until cooked through. Add a little milk and 25g of the butter and mash until potatoes are smooth. Set aside while preparing the fish.
- Place the well-washed fish into large shallow oven and grill-proof dish, sprinkle over the lemon rind and juice. Cover with a well-fitting lid or cling wrap and cook for 5 minutes, on HIGH power, stirring the fish to re-distribute it in the dish after 2 minutes. Leave to stand for a couple of minutes, to complete its cooking time while the sauce is being prepared.
- Put the remaining 25g of the butter, into a large ovenproof dish or jug, add the chopped spring onions and the celery. Cover dish with a well-fitting lid or cling wrap and cook for 2 minutes on HIGH power until the onion is just soft.
- Stir in the flour, then the fish stock – the juice from around the cooked fish, the milk, white wine and chopped parsley. Continue to cook, uncovered for 3 minutes, on HIGH power stirring well after every minute, until the sauce boils and thickens. Adjust seasoning to taste then gently stir into the cooked fish.
- Cover top of pie with the mashed potato, then the grated cheese.
- Return dish to the microwave oven and cook for 3 minutes on HIGH power until sauce starts to bubble around the edges, then quickly brown the top of the dish under a hot grill for 3 – 4 minutes before serving.
1500 watt oven
- Cook potatoes for 4 – 5 minutes on HIGH power, stirring well after 2 minutes.
- Cook fish for 3 minutes on HIGH power, stir and re-arrange half way through cooking time, to ensure an even cook.
- Cook onion and celery for 2 minutes on MEDIUM power (70% – 1295 watts).
- Cook sauce for 2 minutes on MEDIUM power (70% – 1050 watts), stirring after every 30 seconds until sauce boils and thickens.
- Complete cooking pie for 2 minutes on MEDIUM power (70% – 1050 watts), then brown top under a hot grill.
1850 watt oven
- Cook potatoes for 3 – 4 minutes on HIGH power, stirring and re-arranging potatoes, half way through cooking time until cooked through.
- Cook fish for 2 minutes on HIGH power, stir and re-arrange fish half way through cooking time, to ensure an even cook.
- Cook onion and celery for 2 minutes on LOW power (50% – 925 watts).
- Cook sauce for 1 – 1 ½ minutes on MEDIUM power (70% – 1295 watts), stirring after every 30 seconds until sauce boils and thickens.
- Complete cooking pie for 2 minutes on MEDIUM power (70% – 1295 watts).
Accompaniments – Serve with a green vegetable.
