Growing up in India and coming from a long line of restaurateurs, Sid Sagar, the new Head Chef at the Hallmark Gloucester Hotel, was always cut out for hospitality. Having worked in kitchens alongside his father throughout his teens, Sid gained his first hotel management qualification at IHM Kolkatta, before training formally at a range of 5 star resorts in his home country, including the Oberoi and Vanya groups.
Sid then expanded his culinary horizons by working with renowned Thai chefs en route to positions everywhere from Marriott and Hyatt properties, to Best Western Hotels and even Carnival Cruise Lines. Rising to the position of head chef by the age of just 32, he catered to the cream of the Bollywood elite before joining Hallmark Hotels in 2011.
Continually searching for inspiration at local markets and through avid reading of culinary writings from a range of sources, his signature style is a fusion of Asian and British cuisines, embodied in his dishes, including his shortlisted creations such as the starter of “creamed goats cheese, beets and chicory, golden and purple beetroot & balsamic dressing”,’ alongside the “spatchcock poussin dry rubbed in Asian Spices served with chilli jam” which he is proud to see will feature on the new Hallmark Hotels menu, served throughout group’s hotel properties across the UK.
The hotel’s stylish brasserie restaurant is open daily from 7am until 10pm, serving a buffet style breakfast to residential guests, followed by lunch and dinner, serving both an a la carte menu and lighter offering for smaller appetites for all guests and visitors.
