There are so many different versions of curries – it’s hard to know where to start, however this recipe tastes great, it’s quite authentic, gives you some basic ideas and a little scope to do a little experimenting of your own…
This recipe serves 6 hearty portions.
Ingredients
- 283g jar mild curry paste
- 8 large chicken thighs, skinned, removed from the bone and roughly chopped or 4 large chicken breasts, skinned and cut into large chunks
- 1 tbsp butter
- 1 large onion, finely chopped
- 2 – 3 cloves garlic, crushed
- 4 tsps cornflour
- 400g can tomatoes, roughly chopped
Cooking Instructions for 1100 watt oven
- If possible marinade the chicken in the curry paste for at least one hour, (overnight in the fridge works really well), so that the chicken absorbs lots of curry flavour and of course takes on the lovely rich colour.
- Melt the butter in a large microwaveable container for 30 seconds on HIGH power in a 1100 watt oven. Stir in the onion and garlic, cover with a well-fitting lid or cling wrap and continue to cook for 2 minutes on HIGH power until the onion is soft.
- Stir the chicken and all the curry paste into the onions. Re-cover dish and continue to cook for 5 minutes on HIGH power, stirring well halfway through cooking time.
- Stir the cornflour into the tomatoes, then stir tomatoes into the chicken mixture. Cook, uncovered for a further 15 minutes on MEDIUM power (70% – 735 watts) , until all the ingredients have come together, the cornflour has thickened the sauce and the chicken is thoroughly cooked. Stir well after 5 and 10 minutes cooking. Leave to stand, covered for 5 minutes before serving.
- Remember that no liquid evaporates during microwave cooking, any excess liquid therefore won’t ‘cook-down’, so don’t be tempted to add extra liquid or stock to the cooking liquor, this recipe makes ample ‘curry’ sauce.
- For a softer, sweeter curry – substitute half of the can of tomatoes for coconut milk.
- Lamb can be substituted for chicken if preferred.
1500 watt oven
- Melt butter for 30 seconds on – MEDIUM power (70% – 1050 watts).
- Cook onion for 2 minutes on -MEDIUM power (70% – 1050 watts).
- Cook chicken for 5 minutes on – MEDIUM power (70% – 1050 watts).
- Cook curry for 15 minutes on – LOW power (50% – 750 watts).
1850 watt oven
- Melt butter for 30 seconds on – LOW power (50% – 925 watts).
- Cook onion for 1 minute on – MEDIUM power (50% – 925 watts).
- Cook chicken for 5 minutes on – LOW power (50% – 925 watts).
- Cook curry for 10 minutes on – LOW power (50% – 925 watts).
Accompaniments
Poppadums:
- They cook perfectly in the microwave oven. Cook 2 poppadums at a time for 40 seconds in a 1100 watt oven, or 30 seconds for 1500 and 1825 watt ovens.
Potato and Coconut Sambals:
- Cook 400g very small, well-washed new potatoes in a covered microwaveable container for 5 minutes on full power at 1100 watts.
- Cook for 4 minutes on MEDIUM power (70%) for 1500 and 1825 watt ovens.
- Quickly toss potatoes in 25g butter and 125g desiccated coconut. Serve hot.
Banana Salsa:
- Mix together 2 chopped bananas, 2 finely chopped spring onions, 1 de-seeded and finely chopped jalapeno pepper and the juice of 1 lime.
