Renowned Michelin starred Chef Michel Roux Jr. and Master Baker Frédéric Lalos were at IFE on 25 March to launch their partnership on behalf of French bakery specialist, Bridor de France.

The origin of the French word “copain” (“friend”) comes from the Latin “cum panem” or ‘the person we cut bread with’. It is therefore fitting that these two long time friends will be joining together to launch Lalos’ breads in the UK market. The Bridor “Frédéric Lalos” range is generous and made for sharing. Their shapes might be rustic and remind us of the breads of old, but their flavour is resolutely modern and mild with a slightly sweet taste.

Both Michel Roux Jr. and Frédéric Lalos have determined that these breads can be shared by the whole family, from grandparents to grandchildren, at breakfast time or as an accompaniment to a traditional lunch or dinner.

Roux, a long time customer of Bridor and fan of the Lalos collection said:

About Frédéric Lalos

Frédéric Lalos received the French Craftsmanship Award when he was just 26 years old. He has baked bread at several great establishments, from Lenôtre to the Hôtel Matignon. In his search for excellence, this inimitable craftsman has been able to bring a sense of nobility back to French Baking, notably in making traditional loaves fashionable once again.

About “Frédéric Lalos – Paris”

The bread collection consists of 14 large loaves, 2 baguettes and 1 ciabatta. Each one uses natural French flour.  The production process uses traditional baking principles:

  • slow dough kneading
  • gentle, progressive rolling-out
  • long proving period for the dough to ensure intense flavour

Taking this as inspiration, Frédéric Lalos has designed a range of slow fermented large loaves that reflect the trends for bountiful group displays, indulgence and well-being.
