Amandine Chaignot joins Rosewood London

Amandine Chaignot has been appointed Executive Chef for Rosewood London and will begin her journey at one of the capital’s ultra-luxury hotels in mid-January 2015.

Not long after undertaking a postgraduate degree in pharmaceutical studies, Amandine realised that her interests lay in cooking and promptly decided to change her career path. Consequently, she immersed herself in a rigorous training course at École Grégoire-Ferrandi, one of France’s professional culinary schools.

Amandine set her sights high and has worked her way up quickly through the ranks, establishing herself as one of the very few women to take the helm at some of the most highly regarded Parisian kitchens. She has worked in a number of world-renowned restaurants and alongside some of the greatest chefs in France, including at HôtelPlaza Athénée with Alain Ducasse and Jean-François Piège (2001-04), Le Bristol with Eric Frechon (2004-2007), Le Meurice with Yannick Allno and Philippe Mille (2008-2010), and second to Christopher Hache at Hôtel de Crillon (2010-2012). Most recently, Amandine was Executive Chef at the renowned Hôtel Raphael, Paris (2012-2014).

Amandine defines her modern French cooking style as ‘fresh, generous and real’ while respecting the great traditions of French cuisine and meticulous technique in which she was trained. She will oversee the kitchens and menus throughout Rosewood London, with particular emphasis on The Mirror Room.
