Brakes and WRAP have joined forces to create a series of online videos to help inspire chefs with practical tips and ideas to reduce food waste.
Food waste is an ongoing challenge for commercial kitchens but the creative use of ingredients can help to make a difference. The new videos, covering fish, meat and vegetables, aim to show chefs how to get the most from ingredients, waste less food and save money.
Good for business
Ken Mulholland, Brakes’ Environment and Sustainability Manager, said: “Reducing food waste is not only good for the environment, it’s also good for business and the new videos offer caterers lots of easy to execute practical tips for making savings.”
Tackling the huge cost of waste
Eleanor Morris, Programme Area Manager WRAP, said “These videos have been produced as part of the Hospitality and Food Service Agreement, of which Brakes is an active signatory. HaFSA is helping the entire industry tackle the huge cost of waste in the sector, estimated to be some £2.5 billion per annum. These videos show effective ways in which chefs can make real savings in their own kitchens.”
The chef masterclass videos, which were filmed in Brakes’ kitchens and feature the chef Oliver Gladwin, are available on the WRAP website.

WRAP
