Restaurant Associates, has today launched its second cookbook called Hidden Chefs, celebrating London’s finest chefs that are creating culinary excellence in the busy kitchens of the city’s skyscrapers.
Reflecting the extensive contract catering offering in London
The book shares the very best recipes from the talented chefs of the city – talent that can be overlooked, as their food can’t be judged by guides or the general public. The recipes reflect the extensive offer available in contract catering throughout London, such as high end fine dining, casual dining and bistros and even street food pop ups – which means the book ranges from the simple everyday to more contemporary and complex dishes.
Recipes include Lancashire mac and cheese; pan seared sea trout, broccoli puree, caviar, pickled raisins; and gianduja and tiramisu opera – giving the simplest dishes a new twist and offering intricate ideas that would impress at the most extravagant dinner party.
Chefs range from Michel Roux JR to Jeremy Ford; Ana Paula, Jason Atherton and David Nelson. Contributors include chefs at some of Restaurant Associates most high profile clients.
The hidden chefs
