Malmaison joins The Honours list

Hotel group Malmaison has officially launched its partnership with Michelin star chef Martin Wishart which sees him bring a taste of The Honours Brasserie in Edinburgh to the Glasgow venue as part of a £3 million refurbishment programme.

The four-star hotel in the city’s West George Street is housed within a former Greek Orthodox church and has been cited as the first The Honours restaurant outside the capital.

The initial terms of the partnership are based on a five-year licence agreement and, if successful, will look to expand the chef’s The Honours brasserie brand across the hotel group.

In announcing the partnership Malmaison CEO, Gary Davis said:

“The Malmaison brand is always daring to be different and when we decided to refurbish the stunning Glasgow venue we wanted to find something that would be really special. We believe that our partnership with Martin and The Honours will deliver that.”

The new restaurant, designed by Curious Design of Glasgow, has had an investment of £1.5 million which has seen the installation of a bespoke kitchen, including a Josper Grill – one of only five in Glasgow.

It officially opened its doors to the public on 14 November 2014 and generated a waiting-list on its first weekend. The team estimate that the 106-cover restaurant will turn over in excess of £3million in its first year alone.

Chef Martin Wishart commented:

“I have spent more than two years looking for the right location for The Honours Glasgow and am excited to have found a home at Malmaison.”

With a senior kitchen staff all from the West coast, Martin is confident the Glasgow venue is in the best hands possible. He added:

“I am pleased that Head Chef Andrew Greenan will be returning to Glasgow where he has previously worked under Paul Tamburrini at Malmaison’s sister venue, One Devonshire Gardens by Hotel du Vin.”

The Honours Glasgow now brings the chef’s portfolio of venues up to five; with three in Edinburgh – The Honours, Restaurant Martin Wishart and the Cook School by Martin Wishart as well as Martin Wishart at Loch Lomond at the Cameron House Hotel.
