ETM Group has appointed Pieter Fitz-Dreyer as Head Chef of Chiswell Street Dining Rooms, in the City.
Prior to Chiswell Street Dining Rooms, Pieter was Head Chef in the City’s luxury South Place Hotel where, as part of the pre-opening senior food and beverage team, he was responsible for 18 chefs overseeing all aspects of dining, including room service and large events catering.
Pieter has worked for some of the most established hotels and restaurants across the world, following tours of duty at The Atlantic Hotel’s Michelin-starred Ocean restaurant in Jersey and two years as Head Chef at the luxury five-star Carlisle Bay Resort in Antigua, West Indies. His work closer to home includes a successful five year position as Head Chef at the award-winning Indigo restaurant, One Aldwych Hotel, Covent Garden.
In his new role, Pieter will oversee all kitchen operations and the running of the food service from lunch through to afternoon tea and dinner. Pieter is also responsible for menu development and daily sourcing of the best local and seasonal British ingredients, sourced from select UK farms and niche suppliers which ETM Group prides itself on.
Chiswell Street Dining Rooms is a Grade II listed property, located within the transformed Whitbread Brewery building, now home to luxury five-star hotel, The Montcalm.
