Grillstock Bath is the latest opening from the organisers of the highly successful Bristol and Manchester Grillstock BBQ festivals. The restaurant offers mouthwatering barbecued meats cooked low and slow with an authentic Deep South flavour. Evoking the spirit of the festival there’s a pumping hillbilly soundtrack, big sharing tables so that friends and strangers can sit cheek by jowl and soak up the barbeque atmosphere.
The Bath opening follows just 6 months after the huge success of the Bristol smokehouse, for which Grillstock and Simple Simon Design have been shortlisted for the 2014 Restaurant and Bar Design Awards.
The location is in Bath’s newest food quarter The Vaults, close to Graze restaurant, which was itself shortlisted for the designers and Bath Ales in the same awards last year.
The building has been inserted into the arched vault of a former railway building, and as part of a grade II listed building in a World Heritage site, this brought its own challenges in terms of the design and fit out process. Nonetheless the arch contributes to Grillstock’s backyard bbq joint feel.
The new venue has a slightly larger footprint to Grillstock Bristol with a more spacious working environment for kitchen staff, and enables the inclusion of a small bar, as well as a larger number of covers to accommodate the target audience of young professionals and students. The kitchen contains two giant smokers, which take 18hrs+ to lovingly cook the food to sticky, smoky perfection.
Design features include Grillstock’s signature long sharing tables with central wells for their own brand sauces. The dining space is further augmented with denim banquette seating and neon signage. The backyard feel of the reclaimed timber bar is offset by a riveted copper top, original Grillstock festival posters adorn to the corrugated iron clad walls and the toilets are created entirely from OSB boarding with unique digitally printed doors to the cubicles.
